Serendipity Cake - Banana, Chocolate or Berry



125g butter/ Sunworks Ghee

4 eggs (free range)

2 cups serendipity pancake mix

2 teaspoon baking powder - dissolved in 3 tablespoons of soy milk 3/4 cup xylitol, brown sugar or rapadura.


Cake options (to add to the above recipe):

4x   very ripe bananas - mashed

add desired amount of spice for extra flavour like cinnamon and nutmeg


1/2  cup soul fire vital bliss cocoa protein building powder

1x cup mixed berries


1x   cup of cocoa mixed through the pancake mix

230g 70% dark chocolate, melted over double boiler

1x  tablespoon of vanilla extract

A few dashes of cream to add more moisture to mix



  1. cream the ghee/ butter and xylitol/ sugar

  2. add and beat in the eggs, one at a time

  3. add the optional ingredients you have chosen from above (if using chocolate you need to work fast and you can add a little cream to keep it moist)

  4. add 1 cup of pancake mix, and then 1/2 of the baking powder mix, stir it through.

  5. do this again with the next cup and add the last of the baking powder mix

  6. pour this mix into a cake tin that has been greased


Preheat oven to 180 degrees celsius.

Cook for 45min. Check if it is cooked by inserting a fork at the centre - the fork should slide out ‘clean’ if cooked. Depending on the oven it may need up to an hour.

Take the cake out of the oven and let it cool and then turn it onto a cake rack.


The cake is delicious to serve as it is, or you might make passionfruit icing for the banana cake, chocolate icing for the chocolate cake or yoghurt/ maple syrup icing for the berry cake.
